These look like crystal black shrimp very unlikely to come from red cherry shrimp ( i would imagine as they are different type of shrimps) . I would suggest these have come from the golden bees as they are from the same family of shrimp and can contain CRS and CBS genes in them without you knowing . Its possible to get CBS from two golden bees .

be careful of removing too much gravel at once , as the gravel often has heaps of food trapped in it as well as containing a lot of good bacteria that is actually filtering the water in a sense . Removing it all at once can cause an ammonia spike that you don't want. Have had it happen to a tank of mine very early on and certainly wont be doing that again

Does anyone know if you can order native (and non native) plants from aquagreen to WA?

I have experienced a similar thing with my discus when the largest started to be quite aggressive towards the other 3. Not sure what the shaking thing is ( although i have noticed this too) . since moving them out of their 180L tank and into a 500L tank there is no aggression at all and have even started loosely schooling when moving around the tank.
My guess is that the aggression comes from the limited space in the tank along with how discus will naturally form a pecking order that can cause some aggression towards the smaller fish if the largest discus feels it wants more space. Try adding more vallis or other hiding spots to help give the other discus a break from any aggression.
I would be interested in finding out what the shaking was too though.
